Croissant Sandwich Recipes ----------------------------------- RECIPE: HAM-CHEESE-TOMATO CROISSANT From the Kitchen of The Good Food Angel ------------------------------------ INGREDIENTS Croissant Cream cheese Sliced ham Deseeded chopped tomato Torn basil leaves Olive oil METHOD Cut croissant in half and spread cream cheese over each half. Add ham, tomatoes and basil. Drizzle a little olive oil on top. VARIATION: This also works beautifully with a tortilla or bagel. TIP: Do try to source healthy, wholewheat croissants if you use them a lot. Many croissants contain a huge quantity of trans-fats, which are not good for you, so check before buying. But some bakeries and health food stores make them with good quality ingredients. Pitta Sandwich Recipes ----------------------------------------- RECIPE: SPROUTING PITTAS From the Kitchen of The Good Food Angel ------------------------------------------ For 100% crunch! INGREDIENTS Sprouts (alfalfa/mung/broccoli/cress etc.) Cubes of cheddar cheese Fresh pineapple chunks Vinaigrette Pitta bread Serve with a chutney dip METHOD Lightly toast pitta pockets. Cut in half and allow to cool. Toss the sprouts, cheese, and pineapple in vinaigrette and fill pitta pockets. TIP: The best sprouts are the ones your child has grown herself. Sprouting packs are easily available to buy and are pretty foolproof! They are a wonderful way of teaching even the most city-bound child, the wonders of growing her own food. You’ll have natural, fresh. nutrient-packed sprouts ready for the cutting. (Many supermarket pre-packed veggies and sprouts have been washed in a chlorine rinse and so should be avoided.) ------------------------------ RECIPE: PEACHES PITTA SANDWICH from the Kitchen of The Good Food Angel ------------------------------ Simple to make and great for children who will not eat conventional savoury, or bread sandwiches. This meal is sweet, but absolutely healthy and nutritious, especially if you use wholemeal pitta. The nut butter and sunflower seeds provide great protein. The fruit provides vitamins and fibre. The pitta provides energy-giving carbohydrate and wild honey has great medicinal value in maintaining health. INGREDIENTS Wholewheat pitta breadalmond buttersliced fresh peaches or apricotswild organic honeycinnamontoasted sunflower seeds METHOD Warm pitta and cut in two. Allow to cool. Line the inside of each pocket with almond butter. Drizzle the fruit slices with a little honey and sprinkle with cinnamon and sunflower seeds and put inside the pitta. VARIATION: also good with peanut butter, or even with hummus. Novelty Sandwich Recipes ---------------------------------------- RECIPE: THE REAL ELVIS From the Kitchen of The Good Food Angel ---------------------------------------- Elvis’ favourite sandwich recipe. Some children will even love this cold in a lunchbox! (There’s no accounting for taste!) INGREDIENTS bananas peanut butter sliced buttered bread METHOD Mash the bananas and peanut butter together. Spread over a slice of bread. Place another slice on top. Press down and fry in a little butter. VARIATION: for a less greasy sandwich than Elvis liked, put the buttered side of the bread outside and grill or use a sandwich press. TIP: For a lunchbox, allow to cool before wrapping in tin foil. ---------------------------------------- RECIPE: SAMBO SMORGASBORD From the Kitchen of The Good Food Angel ----------------------------------------- If you have a picky child, there is a simple solution--- give them lots to pick from. They’re more likely to find something they will eat. If you can find a container with enough compartments, this is a great DIY mix ‘n’ match lunch, but you need a good segmented tub. Use lots of sambo fillings and send with lots of shaped bread, using cookie cutters. And don’t forget the yummie nibbles. INGREDIENTS Sliced bread cut into fun shapes Mini crackers or animal crackers A mini brown scone/bread roll Possible Fillings: Sliced cheeses Sliced cooked meats Almond butter mixed with chopped dried apricots Peanut butter and grated carrot Egg mayonnaise Olive tapenade and goats cheese Hummus Guacamole Possible Nibbles and Accompaniments: Pretzels Capers Stoned olives Cheese cubes Pineapple cubes Seedless grapes Dips: Mustard Mayonnaise METHOD Fill up your tub with whatever selection of breads, fillings, nibbles and dips that your child is most likely to like and let them loose on it! Sliced Bread Sandwich Recipes -------------------------------------- RECIPE: TRIPLE FUN SANDWICH From the Kitchen of The Good Food Angel --------------------------------------- INGREDIENTS Sliced bread LAYER 1 FILLING: Cream cheese Chopped chives LAYER 2 FILLING: Cooked meat Chopped herbs LAYER 3 FILLING: Chopped nuts (pecans, walnuts, almonds etc.) Dried fruit (raisins, pineapple, apricot etc.) METHOD Cut off bread crusts and use a cookie cutter to make fun shapes (or just cut into triangles when the sandwiches are made if you’re in a hurry). Layer the fillings between slices of bread and press down well. VARIATION: There are endless variations of this method of creating a sandwich that are easy to rustle up, whatever you have to hand. ---------------------------------------- RECIPE: YUM MUM! From the Kitchen of The Good Food Angel ----------------------------------------- Often, grilling a sandwich, especially a cheesy one, can entice a child to eat it, even when it is to be eaten cold---the crunchy crust, contrasting with the chewy filling underneath, and the melding of flavours that a few minutes’ under the grill creates, can transform ‘No Mum!’ into ‘Yum Mum!’ INGREDIENTS cooked tuna or salmon chopped chives black pepper halved baguette grated cheese METHOD Mix the fish, chives and black pepper and spread on a nice fresh baguette. Top with cheese and place under the grill until it forms a golden crust. VARIATION: try this technique with other sambo combinations that have so far been rejected! For sliced bread sambos, put your sandwich press to use. Leftovers Sandwich Recipes ---------------------------------------- RECIPE: BEEF SAMBO From the Kitchen of The Good Food Angel ---------------------------------------- (use the leftovers from your Sunday roast) INGREDIENTS Cooked sliced roast beef Thinly sliced pickled gerkins Dijon mustard Shredded iceberg lettuce Wholewheat bread baps/ burger buns (toast the inside lightly if preferred) METHOD Assemble!
